PRODUCTION NOTES

Cane Origin: Java varietal Santa Maria Tlalixtac, Oaxaca 2,500-3,800 feet above sea level

Fermentation: In pine tanks with ambient yeasts

Distillation: By Rommel Krassel in a copper alembic pot still

Aging:

  • 4 year old Krassel Still Rum aged 

  • 35 months in a New French Oak Cask 

  • Finished 13 months in a  Hungarian Oak ex-red wine cask 

Bottling: Cask strength at 49.6% ABV with no water, sugar, or coloring added. 290 bottles total

ABOUT THE CAÑAMAZO

This deciduous coral tree flowers late in the dry season, blooming thousands of scarlet red flowers that are used in regional traditional dishes. These flowers are not only a delicacy for humans – they also serve as source of nectar for hummingbirds andsome bat species. Found in thirteen states across México, the Colorín tree has multiple colloquial names: El Pipe, El Pito, and Zompantle are some of the other names. Colorín trees are found throughout the Cañada region on the route connecting Santa  Maria Tlalixtac to the San Juan Bautista Cuicatlán, Oaxaca.
