PRODUCTION NOTES

Cane Origin: Java varietal Santa Maria Tlalixtac, Oaxaca 2,500-3,800 feet above sea level

Fermentation: In pine tanks with ambient yeasts

Distillation: By Rommel Krassel in a copper alembic pot still

Aging:

  • Krassel Still Rum: 

    • Aged 27 Months in New French Oak Cask 

    • Finished 18 Months in New Hungarian Oak Cask 

  • Krassel Still Rum: 

    • Aged 27 Months in New French Oak Cask 

    • Finished 13 Months in New Hungarian Oak Cask 

  • Pot Still Rum: 

    • Aged 28 months in a New French Oak Barrel 

    • Finished 13 months in a New Hungarian Cask Cask 

  • Pot Still Rum: 

    • Aged 36 months in an Ex-Cognac Cask 

Bottling: Cask strength at 58.3% ABV with no water, sugar, or coloring added. 600 bottles total (USA)

ABOUT THE MARIPOSA VITRAL

The Mariposa Vitral (Ithomia Leila) is a  delicate, slow-flying butterfly whose name  derives from the the appearance of wings made from  glass. Their translucent wings serve as a defense mechanism, making them more difficult to spot by their predators. The Mariposa feeds on nightshades, and can be spotted in the cloud forests of southeastern Mexico.
