Cane Origin: Java varietal Santa Maria Tlalixtac, Oaxaca 2,500-3,800 feet above sea level

Fermentation: In pine tanks with ambient yeasts

Distillation: Krassel Still Rum

Aging:

  • Aged 28 Months in a Mexican Rum Cask (American Oak)

  • Finished 9 Months in a Jackfruit Cask

Bottling: Cask strength at 54.8% ABV with no water, sugar, or coloring added. 237 bottles total

ABOUT THE ZACUA

Often heard before they are seen, the Zacua (Psarocolius montezuma) emits a a remarkably loud call that rings out over the forest canopy that surround the Krassel family’s cane fields. They forage off of insects found in the multiple bromeliad species found in Santa Maria Tlalixtac. The non-migrating Zacua is particularly esteemed in the coffee plantations of Veracruz, and can be found in evergreen forests and the borders of fruit plantations in southeastern Mexico down to central Panama..
